Today
I thought I would share with you a cookie recipe. I have only baked these once
myself and they were delicious and too good of a recipe not to share. I found
this recipe online and it is mean’t to be a take on a popular American cookie
recipe.
Ingredients

125g Softened Butter
▪
100g Light Soft Brown Sugar
▪
125g Caster Sugar
▪
1 Egg
▪
1 tsp Vanilla Extract
▪
225g Self-Raising Flour
▪
Pinch of Salt
▪
200g Chocolate Pieces
Method
1. Preheat your oven to 180°c (fan)

In a medium sized
mixing bowl, add the softened butter, light brown soft sugar, caster sugar, the
egg and vanilla extract and mix together with a wooden spoon.

Add the self-raising
flour and salt and mix again.
4.
When the mixture is
smooth, add in the chocolate pieces (I use Cadbury’s chocolate buttons) and mix
well.
5. Use about a tablespoon of mixture per cookie and evenly
spread the mixture on a grease paper lined baking tray. There is no need to
flatten them as they will expand whilst in the oven baking.
6. Bake them in the oven for 8 minutes or until the edges
are lightly golden.
7.
When baked, remove
them from the oven. Leave them too cool for 5 minutes to eat them warm or
transfer them onto a wire rack to cool completely.
